Ahh, powerballs. What delicious treats these turned out to be all summer. Now that I've had the chance to peruse iHerb, I might be making these again. I took the Eat Your Kimchi recipe and adapted it ever so slightly (took out the almonds). It's a surprisingly easy (though definitely time consuming) recipe, and you'll be stocked with snacks and/or breakfast for quite a while.
Ingredients:
- 2 cups oats (Gluten Free or regular work)
- 1/2 ground flaxseed (in my instance, I just ground the flaxseed in the blender)
- 1/2 cup chia seeds
- 2 T goji berries
- 1/4 cup cacao nibs
- 1 1/2 cup toasted coconut flakes (spread out on a pan and put in the oven for a few minutes)
- 1/2 cup honey (or more)
- 1 1/2 cup peanut butter
For the coating:
- handful of sunflower seeds
- handful of green pumpkin seeds
- handful of chocolate chips
Directions:
- Combine all the dry ingredients in a bowl.
- Mix in peanut butter and then honey. Add some honey if it's not sticky enough.
- It's going to be really hard to mix, so feel free to use your hands!
- Blend the ingredients for the balls and put in a bowl.
- Roll the mix in a ball and coat in the powder.
- Done! Keep in the freezer.
