{Foodie}: Powaaaballs

Ahh, powerballs. What delicious treats these turned out to be all summer. Now that I've had the chance to peruse iHerb, I might be making these again. I took the Eat Your Kimchi recipe and adapted it ever so slightly (took out the almonds). It's a surprisingly easy (though definitely time consuming) recipe, and you'll be stocked with snacks and/or breakfast for quite a while. 

Ingredients:

  • 2 cups oats (Gluten Free or regular work)
  • 1/2 ground flaxseed (in my instance, I just ground the flaxseed in the blender)
  • 1/2 cup chia seeds
  • 2 T goji berries
  • 1/4 cup cacao nibs
  • 1 1/2 cup toasted coconut flakes (spread out on a pan and put in the oven for a few minutes)
  • 1/2 cup honey (or more)
  • 1 1/2 cup peanut butter
For the coating:
  • handful of sunflower seeds
  • handful of green pumpkin seeds
  • handful of chocolate chips

Directions: 
  1. Combine all the dry ingredients in a bowl. 
  2. Mix in peanut butter and then honey. Add some honey if it's not sticky enough.
  3. It's going to be really hard to mix, so feel free to use your hands!
  4. Blend the ingredients for the balls and put in a bowl.
  5. Roll the mix in a ball and coat in the powder.
  6. Done! Keep in the freezer.
